Happy Thanksgiving to You, and may your day be Blessed with Love, Kindness, and Abundance of Gods Grace. Today, I started my Chirstmas Season 2009. My first function is Thanksgiving Night with US Forces in the Republic of Kosovo. Friday night I will attend the Native American Dancers program featuring a group of Apache/Cheyenne Indian from Arizona/North Dakota, here also to entertain the US Military and combined forces. What an exciting time this will be. What can be more fitting than meeting true American Indians on Thanksgiving Day 2009.
And I give Thanks to God for the Abundance He has provided me in this Life.

Sweet Potatoes with Brown Sugar Top
I am not exactly sure that the Pilgrim, or the American Indian had Sweet Potatoes on that now famous day so long ago. Actually, they are not potatoes at all. Yams, as they are called in the south are a tuber, a root crop, so the experts* say. I just remember them as being a staple on the Southern Thanksgiving Table.
Pure and Simple, Uncomplicated; Select medium well shaped yams, wash to remove dust, dirt, allow to dry. Grease each yam with vegetable shortning, oil, or bacon grease. Place in a flat oven proof baking pan and bake appx. 1hour at 350 degree. I usually bake them in an old cast iron skillet like my Mother. You may eat them steaming hot from the oven, just remove the peel. they are great with a nice scoop of real butter and a sprinkle of brown sugar. Great as a natural desert.

3 cups Mashed sweet potatoes
1 cup white sugar (to taste)
2 eggs beaten
1 tsp. vanilla
1 stick melted butter
Mix potatoes, sugar, butter, vanilla in a bowl. Beat eggs and stir into mixture. Turn into a buttered in buttered baking dish.
Top sweet potatoes with the following mixture:
1 cup brown sugar
1/3 cup flour
1 cup finely chopped pecans
1/3 cup melted butter
Bake 30 minutes in 350 degree oven.
*Mother, Grandmother, all other Womenfolk

Thanksgiving 2009
And the Pilgrims gave thanks to God for the abundance of harvest He provided. We all know the hardships they encountered, and the tradition that it has become. Please give thanks to God this Thanksgiving Day, and remember all those who are hungry and homeless. Remember those who are away from their family for what ever reason. Give thanks for those who sacrafice for you and me.
