Potato Favorite

POTATO PANCAKES

5 or 6 lg. potatoes, peeled and grated
2 eggs
1 med. onion, finely chopped
1/2 c. flour
Salt and Pepper as you like

Combine and mix all ingredients thoroughly; fry in oil in hot pan until golden brown. A tablespoon of batter makes a good sized pancake.

These are simple and deliciceous. I like to have these at Breakfast with fresh eggs and bacon. Biscuits are an added treat.

LOVE COMES THROUGH THE EYES THAT SEE



Love comes through the eyes that see

And through the ears that hear,

For people are quite beautiful,

And words make feelings clear.


Love comes through the hands that touch

With unabashed affection,

For only skin-to-skin can love

Maintain its true direction.


Love comes through the tastes and smells

Of fresh and well-cooked food,

For in the gift of nourishment

Is much else that is good.


But though love comes through senses five,

Love comes from the heart,

For there resides the greater love

Of which ours is a part.

Lamb Stew, Grilled Paprika Peppers, and Wood fire Bread
It has been a while since our last post so I thought I would drop by and add a few fresh lines. I had dinner tonight with my collague at Viva Fresh (Supermarket/Restaurant), and I must admit it has not changed since the last time we ate there. It is amazing how they char the peppers to remove the skin, then cook them in olive oil and a seasoning base. They are delictable with the beans, cooked in crock baking dishes. The way they cook in glazed earthen wear is the same as it has been for over 2000 years. I had a lamb stew, meat with vegetables cooked in a bottle type vessle which is placed in a coal fire. The bread is cooked on the open fire and has the most wonderful smoke flavor. Last, I must mention the feta cheese, and black olives cooked in a creamy sauce with peppers. This serves as the appetizer with the hot bread. It is heavenly.
